NEVER SURRENDER Souped Pheasant
This is a recipe you can throw together quick... It works for entertaining the most important of guests as well as your beer drinkin' buddies...
step 1) clean one pheasant for 2 persons, 2 pheasants for 3 or 4 persons.. Cut the breast meat off, as well as the leg quarters..
step 2) bread the pheasant parts in flower and fry them on medium-low heat in butter until browned... (I like mine fairly crispy.. so I put a couple tablespoons of Olive Oil in the butter so I can cook the pheasnt at a hotter temperature... thus making it more crispy on the outside...
step 3) open a can of Campbell's Mushroom Soup (2 cans for 2 pheasants... or 3 cans if you like a lot of sauce...) .. Mix with MILK / Not Water at half the rate .. This means if the soup calls for 1 cup water, you add 1/2 cup milk (this is to keep the sauce thicker).. Stir in and warm, pepper to taste...
step 4) Eat ! best over Mashed Potatoes, but fine also over brown rice or pasta... great with red wine!!!
